Lazy Satay Chicken Recipe

One of my kids’ favorite meals is the “yellow chicken on a stick”, which most people know to be Thai Chicken Satay. And I can’t blame them for liking it. It’s got tender, juicy chicken that’s marinated in a truly divine peanut sauce and then it’s grilled to perfection and served with extra sauce for dipping. What’s not to love?

However, the easiest way to get Thai Chicken Satay is to go out to eat. However, as great as it is to not have to cook or do the dishes, going out to eat has two major downsides – it gets expensive and it leads to eating other delicious, but usually high calorie foods that I don’t need (Mango Sticky Rice, anyone?). So, I like to try and make my family’s favorite meals at home and to give them a lighter, healthier twist.

Mediterranean Tuna Salad Recipe

Tuna salad sandwiches is one of those classic lunches. It’s something that just about everyone remembers having as a kid. It’s something that’s still a classic for long hikes and picnic lunches. But as an everyday lunch – it’s not my favorite. The traditional tuna salad recipe is loaded with mayo, therefore pretty high in fat and calories and very low in fiber and vegetables.

I decided to switch up the classic tuna salad and make a lighter, and healthier, version for lunch. I turned to the Mediterranean region for inspiration. The Mediterranean diet contains a lot of fish, so it seems like a natural fit. Then, I thought I’d add some more classic Mediterranean flavors – fresh veggies, garbanzo beans, and olives.

French Onion Chicken Casserole Recipe

French Onion is one of my all time favorite soups. I love the delicious and rich flavor of it. And even though it’s been in the high 80’s this week, it’s been one of those weeks where I’ve needed some comfort food. But while I was enjoying a bowl of my favorite soup, I got the idea to make a casserole using the same flavors.

While I wanted the casserole to have the same flavors as the soup, I wanted to add some protein to it as well. I also wanted it to be kid-friendly. Making and cleaning up two meals because the kids won’t eat one is not something I’m inclined to do. It makes life much, much easier when the whole family eats the same thing.
